Ok the holiday is just around the corner... and I thought we could get just one location for all the rabbits/bunnies out there with waffles, pancakes, cookies on their head. I dont know the origin, but every time I see them, I just cant help but have a smile on my face.
Ingredients: 4 lb rabbit, cut in pieces 8 medium red potatoes 2 garlic cloves 4 Tbsp extra virgin olive oil 4 oz slab bacon, cut into 1" cubes (you can leave the bacon out if you want to be a little healthier) 6 Tbsp fresh rosemary 2 tsp ground black pepper Kosher salt, to taste
Directions: Preheat your oven to 400. Quarter the potatoes and place them in a roasting pan with the garlic Sprinkle with 1 Tbsp olive oil and coat. Bake for 30 min. While this bakes, put the baconin a large skillet and place over low heat. Cook just until bacon begins to wilt then remove. Sautee the rabbit to brown on both sides this will keep the juices in Remove the roasting pan from oven and reduce heat to 350. Add the rabbit, rosemary, pepper, salt, reserved pan drippings, and the rest of the olive oil. Put back in the oven for 20 min. Sprinkle bacon on top and bake for about 20 or 30 minutes longer
