So I just put my superbike handlebars on now. Looks good, and feels good. The clutch and brake lever fit snugly, but the throttle assembly AND the lightswitch/horn assembly a loose, no matter how tight I tighten... Any common issues with this? Any ideas?

You could wrap the area where the throttle and brake attach with tape, just don't get any where the throttle tube is.
The other is to make sure everything is together and take one of the halfs and remove metal from the flat so it tightens on the bar more.

I had a similar problem, where I couldn't get my gear shift lever tight on the shaft no matter what.

I cut a piece from an aluminum drink can about 0.25 inches wide and just long enough to wrap the shaft. Perfect fit and completely invisible.
