What would happen if you just turned the fan on the XB completely off?

Does that little fan really do that much cooling work that it has to run so frequently?

Considering the fan comes on at 428F (or there abouts) I would not want to find out...
Depending on ambient conditions, I've done 100 mile rides with the fan remaining off except when the engine is shut off.

I've read the fan helps to prevent the fuel from boiling in the injector lines and the oil from coking in the rocker box.

Putting a right side airscoop on the bike saves the fan a lot of running time!

Also, that little fan is pretty beefy.
I think it takes like 7 amps at full song.

That "little" fan turns serious RPM and does a lot. One of the reasons the motor is so tightly wrapped by the frame is to help shroud the fan to maximize its effectiveness in pulling air across the fins. Without it, you may as well be frying eggs on the frame after a long ride.
