Is it easy to remove the emissions stuff!
I notice it has a black cannister on the left side of the motor?

Yes, two bolts hold the can on, then you remove remove the hose going to the throttle body and cap the fitting on the throttle body. Then you let me buy the can off you : )

You cap the throttle body one but there is another overflow line that you want to buy that runs down on the inside of the left front peg mount. There is a plastic loop that you will see that it slides into. It is for the non-California bikes, people with a parts manual can pipe in with the part number.

The fuel vent line can be left where it is, no need to replace it.

You can, but then if you happen to overfill a little and you don't go ride immediately, you'll be dripping fuel on the primary cover as opposed to just on the ground.
