Do I need to remove the disc or sprocket?
Or can I just take the wheel off and take it to an MC tire shop?

You must leave the disk and sprocket on for proper balancing. No need to remove them at all.

Just remove the axle, belt, and pull the wheel. Just replaced one last weekend.

when i take a wheel to change a tire i draw arrows (for direction of rotation)on the brake disc with a magic marker. that way you almost always get the tire on in the right direction.
