Does anyone know of any gauges for oil pressure (mechanical or digital), battery voltage and oil temp that I could hook up on my XB9SX?

For your Oil temp you could use one like this or buy mine. I've already had a drain bolt machined to accommodate the sensor. Just replace your drain bolt and connect "On" and "Ground". It has a blue/green back light and is switchable between Fahrenheit or Celsius. PM me if your interested.
