Hi guys!

Last sunday I let the bike fall in the garage!

from there the bike takes a long time to warm up!

ok...
Brazilian summer!

80ºF in the morning! after a long straight 160mp/h the bike started to fail in about 10000rpm I look to temperature's bike!!

OMG! COLD COLD COLD COLD!!!

in back , I noticed that the bike maintains a temperature of 155 ~ 158ºF

In manual:
Low Engine Temperature
1- Open thermostat
2- Defective engine coolant sensor
3- Defective fans

fans are ok...

bad thermostat = long warm up
bad sender = slow no change in readings

what are the readings when cold before engine start ?

Sorry
temperatures, when the bike is cold the intake air and coolant temperatures should be close and as the machine warms up they will change.

If after about 2 ~ 3 minutes the engine temp is not
up in the 170F range with 80F air temp sensor is likely bad, if the sensor was good and the thermostat was bad the machine will warm up slowly with the heads getting very hot ( poor flow ) or not warm at all too much flow
the stat has a bypass so some coolant flows all the time, I would look for a disconnected or pinched wire.
