What is involved to change narrow lids to deep lids? Like if you had a pair of each, are extra hinges or anything required?

As long as you have the loops and the hinges on each lid, they change in seconds. I had both until recently. I prefer the wide lids for fit, look, and storage, so I sold off the narrow lids with enough spare parts to make a full set of bags.

So hinge sets are needed for each lid, the hinges don't stay with the backs , is that correct?

There are hinge halves on the both sides, they just slide right in.

Male ends on the inner bags and female ends on the lids, if you can see in the photo.

The cable that holds it when open attaches to the lid with a knurled nut. Depending who put it on the lids on the bike now you may need pliers and an allen wrench to remove it/them. Simply transfer them - with the cable attached - to the other set of lids.

I have both sets for my S2 and can swap them in about 3 minutes. I like the wides for carrying lots of crap; I like the narrows for city riding and parking when I'm only carrying a coffee mug and rain suit. Honestly...my narrows get most of the use these days. If I have to carry crap...I have the Ulysses : )

On mine I had the knurled nuts on both sets of lids already and positioned so that I can just slide the loop off the lid sides. That way I could just unhook the looks, flip the safety lock at the bottom, and slide the lid off as I slid the cable off the nut and do the reverse on the other lid. About 15 seconds each to change the lids this way.
