Dave, I bought a small grill & everything else for it....just need some meat to burn: D The wife has volunteered to man the grill.

I will probably show up just to play cheerleader, listen to the BS, take some pics, listen to your women folk tell what you guys are really like and eat your food. Difference is this time I will be on the Buell and take the back roads.

Oh yeah...Will also use the helmet for "Wild Hair Control." LMAO

We can pick some up off the hwy on the way down.

Lake, I talked to Pale on Sunday and he's going to go!
We can meet you at the shop that morning and caravan down together. I need to come to the shop to pick up Terry Flynn anyway.

Will have the wife look up some recipes for possum & squirrel burgers. Now I always get confused, is it red or white wine with possum?

Chicken Fried Squirrel
Our thanks to Bryon Portz for sending in this recipe.



~ quartered and cleaned squirrels, 1 per person
~ buttermilk
~ OldBay seasoning
~ flour
~ salt & pepper
~ shortening




Soak your meat for at least an hour in buttermilk.

Combine the flour & OldBay until you can see the flour turn light pink. Sprinkle in some salt and pepper to taste.

Heat up your shortening to 375 degrees in a iron skillet or deep fryer deep enough to cover the meat.

Roll or shake your meat in the flour mix and fry until the coating is golden brown.

Take it out and place it on a rack to drain. Place it in your oven for about 1/2 hour at 275 degrees.

Serve and Enjoy!

CREAMED SQUIRREL OVER BISCUITS

Prep Time:
2 hours

Ingredients
Utensils

3-4 squirrels - cooked and de-boned Large pot
1/2 stick margarine Sauté pan
1 medium onion (chopped)
1 beef bouillon
1 Tablespoon Worcestershire sauce
1 clove garlic (crushed)
Salt and Pepper
2 Tablespoon flour
1 can chicken broth
Directions
Parboil squirrel and pick meat off the bones
Sauté onion, garlic, beef bouillon in margarine and Worcestershire sauce.
Add salt and pepper
Add in flour to thicken
Add squirrel meat

*Serve over biscuit, bread or mashed potatoes with salad, applesauce or coleslaw

Cajun Possum Chili

Ingredients:

Tomatoe Sauce (depends on possum)
1 tsp.-1 cup Chili Powder (Depends on Taste and possum)
1 Large possum or 3 small (If you ran over the possums better make it 4)
1 large pot or two large ones if the first isn't enough.
5-10 chili peppers (depends on taste and possum)
5-10 red peppers (depends on taste and possum)
5-10 jalapenio peppers (depends on taste and possum)
How ever much Cayenne Pepper you like, it depends on your taste and possum.
1 tsp. Black Pepper
a pinch of salt
Chili Beans for extra flavor
And whatever other ingredients that are hot and spicy you would like to add.

Directions:
1. Skin possum(s)
2. Remove internal organs, head, claws, and bones. There is no flavor or use for these. But if you want to add them, go ahead.
3. Put some tomatoe sauce in the pot(s). Then add the possum.
4. Chop peppers
5. Skip step four if you don't want chopped peppers; it doesn't matter.
6. Put the rest in and let set for a long dang while.
7. Before serving make sure you have enough bread, Milk, and Toliet paper for after dinner.
8. Serve. Enjoy
9. Race for bathroom. Whoever is first will make a large stench. Have enough air freshner.

Serving size of Meal-depends on how much you put in and the possum.

Warning-You're a redneck if you try this. (Either that or you like really hot chili.) May cause sudden urges to go to the bathroom. May cause burnt tongues and mouths. May cause severe indegestion.
