It seems most countries regs require that the bodywork extends beyond the back wheel.

Why it is a requirement is beyond me. Sensible, maybe - but when did that have anything to do with it?

cheese graters are pretty easily removed.. maybe they're made that way on purpose to pass regs but still look dead sexy after very little modding

Look at the top pic...see the thing sticking out over the rear wheel?..That's the cheese grater, its a small "dish" with holes. I call mine the Noodle Strainer.
