Mainers are pretty much meat hunters. But black bear does not have much of a reputation for being very good eating up here. I've not tried any yet though.
I ate some once in New Mexico when I was in my early teens. Lots of onions, garlic, and chili powder, and it was still something short of delicious.
The bear I had was shot in northern Canada by a buddy of mine. I was not expecting much, and I was completely surprised by how good it was. It was just cooked like a pot roast with lots of carrots, onions, and potatoes.
When I was a kid, I lived way up in Northern Wisconsin, and my dad used to drive me to the dump so we could watch the bears eat garbage. I can only imagine what they tasted like.
There was also one in a cage by a bar he used to take me to. That bear probably would have tasted like PBR, orange soda and dog chow.
