As I'm sure everyone is aware, it is really hard to use a drop down menu on any parts site to double check the compatibility for our bikes. I am going to wrap my pipes using header wrap this weekend and obviously want to put on a new gasket. Will this one work? From my understanding any sportster gasket set should work.

They will work just fine. I like using the taper style gaskets, the put less pressure on the header.

Dont know what lances thoughts are but I would suggest not using the small screaming eagle ones.

I have found that the thin gaskets will try to twist or bind the header. The thin one aren't that forgiving if your header doesn't fit square with the exhaust port once the lower header mount is is in. Use the tapered ones to reduce the chance of your header cracking.
