I am going to reroute the breather line from the intake to the catch can in my 2000 s3t. What im wondering is there is also a sensor that plugs into it, should it stay. What does this sensor do?

This is the intake air temp sensor,needs to be in the air stream.

Do you know if having the hole that the breather vent line used to go into open will affect the air temp sensor?

Nope,and as long as the hole is not open to inside the filter area it is not a big deal to leave open.
