For anyone that hasn't had to clean stainless pans or grill. Heat and vinegar are your friends. The trick to instant pot cleaning after cooking pork in it is to pour a little vinegar in it and set it to high pressure. When it gets hot let off the pressure and wipe it out. I dump the vinegar before wiping. I learned it when cleaning my grill at a fair.
I just love ribs and smoked meat in general. If you find a place that you don't need sauce, you've found the place. Smoke duck when its in season is awesome!
You know, Vern, that the pulled pork in Harrisville is among the best you'll ever get. I hope you're there again this year to enjoy it with us. Then, we can go back to the campground and play Campfire Jenga with a colorful fire.
A friend of mine and I went on a Southern Illinois brewery tour yesterday and we started out with some Q! It was in New Baden Illinois off of interstate 64. It's called A Fine Swine. My friend, being a BBQ judge knows the owner from when he competed. I got the sampler which had pulled pork, brisket, ribs and chicken. The pulled pork was ok but the brisket was amazing! Cut with your fork and melt in your mouth. The ribs were almost up to Jim Smokin Q standards. Very good. The chicken was also moist and flavorful. Definitely a place I'll go back to. We felt rather secure in our surroundings since we had a contingent from Scott Air Force base dining with us!! So a thumbs up to A Fine Swine!

I believe I've shot you good folk an inquiry some time back... why in the world don't you build out a big unit here in the Knoxville area?! The various UT sports programs, the University itself, nearby ORNL, the Smoky Mountain national park, Deal's Gap, all these present a ginormous customer base from which to draw from.
I'm a lifelong F&B professional. We do have some very good local guys slinging 'cue, nothing like what you guys do. I know the good stuff- in my experience, only Jim's Smokin' Butts in Blairsville GA beats Martin's.
For what it's worth, there's a huge new multi-use land development in Alcoa, still in the first new stages, Springbrook Farms. Just below the airport, looks to be a very nice area when done. Just my $.02, I'm not a pro site scout. However, Knoxville has long been known as a prime test market for restaurant concepts- this is a huge restaurant town. I for one would LOVE to see you guys come to town.
So, for the time being, I guess I'll have to stop in my home digs of Mt. Juliet, or go see my cousin in Nolensville. See about getting here to Knoxvegas! You'll be glad you did.
