A bit of sad news today- a local BBQ joint went out of business. They were walking distance from my house... but, in all truth they didn't stack up to the competition.
They bought a hella-$$$ piece of property, formerly an old gas station, and threw a $hit-ton of money to build a very nice facility... but their product just wasn't all that. We ate there once, and everything was quite good- except the BBQ! Dry.
Dang. Hate to see a biz close, but, being in the restaurant industry, I know the scenario too well.

I'm thinking it was a Carolina vs Texas kinda thing. Texas BBQ is primarily beef. My favorite sandwich at the Dinosaur BBQ is the "Pork-sket." It's pulled pork and brisket. Best of both worlds.
