The type of woods and how they're aged will make a difference... in the new year I'm hoping to improve my skillset with my barrel smoker, and try to work it in good on my gas grill when possible. I'm getting a big urge to fire up my rotisserie coming this Sunday, got peeps coming over to celebrate a B-day.
Even got some good cedar to slap some tasty salmon on...

My trip has begun. Tuesday at Q-Dogs in Cedar Rapids. The brisket was wonderful and the smoked baked beans as well. Not enough ambition to find anything in St Louis. Probably missed out on something good. Looking forward to Martin's in Nashville tonight.
It's the very weird one. Wish timing was better and have a chance to meet up with whoever was around, but I'll be just south of Atlanta tomorrow. Looking forward to some good ribs in a couple hours.
Well I smell like smoke. Martin's definitely has some good ribs. The coleslaw is tasty and the beans are good too. 5 types of sauces and the devil's nectar sneaks up on you. All good though. Doubt I'll make it to Fox brothers. I'll be in Perry. Maybe there's something there. So far its been a pretty good trip.
I'm not putting down Texas Brisket. I like good brisket a lot. But there's more to BBQ than just Brisket. The best Pulled Pork I've ever tasted was in West Virginia. It was so good, that it didn't need any sauce; it was tender, moist and flavorful. However, I keep trying to figure which sauce would complement it just right. (that gave me something to occupy my mind for hours while I was traveling last summer)
I'm kind of on the other side of the fence, to me BBQ starts and ends with beef.
Fox Brothers has excellent Brisket as well as a beef short rib which is anything but short. They also have a good selection of the "other" meats, so there is something for everyone.
Brisket and beef ribs are #1 to me, pulled pork is my last stop on the menu.
Not that I don't like it, beef is just my preference.
Ok, so we are in Austin TX for a few days getting our son moved into his new place/town. Just got back from Red's Porch. Had the triple meat sampler. Brisket, chicken and pork sausage. Sweet sauce that I liked but only had a little of. The brisket was very good and tender. The chicken was some of the best I've had. Very smoky and moist. The sausage was good but not something I would have again. Also very good collared greens. Yesterday at Gus's World Famous Chicken. Best fried chicken ever. Tuesday was at the Cedar Door. Brisket tacos were huge and very tasty. If I lived here I could get really fat. But it would be fat and happy.
