I have a quick question. Does the EBR Race ECM for a 08XT utilize the O2 sensor?

I believe it does...but you could ask EBR...

It does use them if they are connected, but if you disconnect them you will not get an error code and the bike will function fine with a locked AFV. They programmed it to work either way.
