Had one of my favourite snacks yesterday;

Fish finger toasties.

Gently grill your fish-fingers on some foil (cooks better & keeps the oven clean) turn them once or twice during cooking & spread a little butter (salted naturally) on to get the best taste.

Take 2 slices of hot buttered toast cover one slice with fish fingers & the other with a little Heinz ketchup, upturn 2nd slice & place on top of first (covered sides together ya bonehead) to make a sandwich.

Scoff.

Belch.

Grin.


Also while we're on the quick snack menu, the good old standby "Beans on toast" (Britchris will be drooling now).

I tin of Heinz baked beans, follow cooking instructions on tin, but add a good shake of "Lea & Perrins Worcestershire Sauce" & a knob of butter.
Serve on a bed of hot buttered toast accompanied by a large mug of strong coffee.

Caution this dish may produce unwanted side effects causing exile to den/garage. (see "Blazing Saddles" for details.)

Better Beer Batter
The Alaskan Brewing Co. makes a smoked porter that i would absolutely recommend using when making Beer Batter for fish-n-chips. Get the big bottle, some for the batter, some for the cook.........
The smokey flavor is amazing!

@Grumpy: some of us poor slobs grew up on beans on toast. Love it.
Don't forget fried egg sandwiches (toasted bread), marmite on toast (w/salted butter)
Bacon & french fies sandwiches (w/ketchup.)
It's amazing how many meals can be created from one pan & a toaster.

A chicken dish

Take a boneless skinless chicken breast
rinse trim any fat off,


Marinade:
Minute maid lime aid short it one can of water. Margarita mix may work here too.

Add garlic, rosemary, dill, and red pepper

allow the chicken to soak under refrige for at least 24 hours, 48 max then freeze if desired to store for long term.

grill carefully ( lots of sugar tends to burn easily, ) about 15 min or so till done

serve on jasmine (yellow) rice and black beans garnish with tortilla chips, and lime slice.

Unsolicited Advice (cookery related);

Do not like how chickens are raised so we get out eggs from a friend of my Wife’s who keeps them as a hobby.

Got a dozen eggs – Two have holes in the shell – Worry about salmonella so put them aside for the dog.
This AM was going to give them to the dog but was still worried about food poisoning. Decided to cook them.

Ask wife how to microwave eggs & she says “Look it up on the internet before you do anything!”. – Being an xpert in physics I know that steam cannot build up in an open vessel. The shells are already broken so pop the eggs into the microwave & set for 5 minutes.

RESULTS:
2.5 minutes in
Shells crack & white starts to come out. – Good, will save time peeling – and – so much for worrying about a pressure build up.

4.5 minutes in
Loud explosion,
Door of microwave blows out
The dog that runs to the sound of guns & begs to go out during thunderstorms runs & hides under table.
Tiny, little pieces of egg bounce off microwave door & fly 10’ into living room
The floor of kitchen covered in kind of an egg mist

Spent 1 hour cleaning microwave, kitchen floor, stove top, side of refrigerator, . . . .
And
2 hours scrubbing rugs

There are 2 membranes in an egg that are semi permeable. Microwave and they are NON Permeable.
OH and dont dry pets in the microwave they have several more layers of semi permeable membranes!

I only microwave eggs once they're out of the shell and scrambled- that was my dad's favorite way to cook them.

a bad egg will float on top of water when UNBOILED
a good egg should lay perfectly flat on the bottom of the bowl
If it tips up like a weeble - your clock is ticking - you got about a week on it

Foxes and coyotes will eat any damn egg and pay the consequences later

Got a new crock pot mini Three set
Perfect for threes, a potato and a slide of sausage and white gravy.
Make up the separate canisters for brunch.... and then take a nap
you know when it is time to wake up - the best alarm clock ever.

I havent tried to do bacon in it yet.... I think there is no substitute for frying that meat.

Just for FUN! Take a raw-egg, line all sides with milk-soaked bread and put them it in a microwave on high for 15mins. Just sit back and wait for the show...Instant French-Toast!

We FINALLY used our slow cooker for the first time. Cioppino came out EXCELLENT. Only problem was with it simmering for ten hours, the house smelled wonderful and I was so hungry the sofa cushions were starting to look edible...

Sorry... I couldn't resist. I like food.

One of my favorite things ever, smoked beef ribs. Make a rub of salt, black pepper, red pepper, powdered garlic. Cake it on, I mean literally just coat every piece and throw it right in the smoker. Use apple cider vinegar in the water tray. Every 4 hours, add some more coals, throw in some more wood chips.



Voila! 16 hours later, and you've got these ribs.

I like the Trident brand bake them as directed on package
whole wheat roll
a couple of sliced pickles
and some fresh raw kale.
delish good protein and low calorie

Grilled Salmon

1. Take a salmon filet and cut into 4 pieces.
2. Season the pieces with black pepper, salt and powdered garlic.
3. Make a marinade of equal parts water, veg. oil, brown sugar and soy sauce (I usually do a 1/3 cup of each).
4. Put seasoned pieces and marinade in a ziploc bag for at least w hours in the fridge.
5. Put aluminum foil on your grill grate, then poke a bunch of little holes and spray it with some cooking spray.
6. Cook the fish until it starts to flake.

I like this because the ingredients are simple and the prep time (minus the time for marinading and firing up the grill) is less than 5 min. Oh and it tastes awesome! Works even with crappy frozen salmon.
