Why? Jar Jar Binks!! Tq got it- when you're canning (dunno why it's called that, when you're using glass jars), the most satisfying thing about the process is what happens once the jars come out of the boiling pot- as they cool and the vacuum begins to set up inside, the lids go "BINK"! This indicates that all is well and the product is well finished. I love just piddling around and hearing that random "BINK" as they set...
