The origins are supposedly in NY, but I have never seen them here. I've spent a lot of time in RI over the years but never had one.

There was a place on Broadway in Manhattan uptown that had some awesome dogs, the mustard was great but the Kraut was not so good....

There used to be an old guy named Joe who had a cart right off the west side highway near the sanitation yards. He used to split the hot dog, and fry it on a griddle under a bed of thinly sliced yellow onions. He'd throw a dash of salt and black pepper, and a liberal shake of red pepper flakes onto the onions. When the dog was perfectly fried, the onions would have the perfect consistency, and he'd scoop it all onto a bun. I'd add a little mustard, but it was really unnecessary. I'm salivating. He'd cook a hamburger the same way if you wanted.

There is a German community in Hobart, Tasmania. The do the best wieners and sauerkraut I ever et - at a stall in Salamanca Markets every Saturday.

The term "all the way" is how we do wieners in RI.Do they use "all the way" anywhere else? Our favorites include Rod's grill in Warren or Sam's (greek) grill in N. Providence.

Johnnylunchbox I wonder if Joe was the same guy that was there when I was there in 1989. You described it dead on. Awesome.
There was another Guy that had three dogs in a bun Kraut, Peppers, Stone ground Mustered, His own red sauce and a better than average Hot Sauce that brought it all together. It was Awesome. I still to this day could not tell you where I was at for that one other than three blocks away from the Waldorf-Astoria by Central Park.

Almost any natural casing dog works for me.
Add a stripe of brown mustard, top with steaming kraut, and cover it with a hot/tobasco sauce until pink/red.
