when the bike is warm, she starts right up, no issues.
When the bike is cold, the starter usually spins freely a couple of times before it will finally catch and actually spin the motor.

I'm thinking this is the clutch attached to the rotor? How can this possibly be failing? I'm not sure how exactly it works, but think it's just a bunch of rollers that engage when the gear is spun by the starter, and retract or spin freely once the engine spins on it's own?
Am I going to have to replace this whole clutch assembly?

Somebody enlighten me...

Yep my CR does this too when it is below freezing, it hasn't been bad enough yet for me to warrant getting it fixed. From what I've read, it is the sprang clutch on the starter, and to get to it, I was told you need to remove the magneto rotor cup. Fun : (

If that is true, you might as well swap in the EBR rotor cup if you don't have it yet, as that would be killing two birds with one stone.
