I'm a new Buell owner and I'm looking to start a long term relationship with a dealer / mechanic in the Twin Cities area of Minnesota. Any recommendations for a good mechanic that will be willing to work with me on my specific projects? (meaning I'm not just looking for someone to do the regularly scheduled maintenance.)

You might get a better answer in the quickboard section. This area doesn't get much traffic. Also, check the BRAN section for locals who will help you find what you're looking for. Then again, there is a great review of Hal's down a few that might be just what you're looking for.
