Just wedged new .AAG belt on my '00 S-3. Do I run the old S-3 belt tension, or tighten that puppy up? Whadaya think?

Stick with the OEM belt tension. Once the bike squats after you hop on, or during cornering, the tension will be correct and not over tight.
