I am looking into some upgrades and was wondering how big have you gone?

I have a new XB12S and am looking at two options:

Nallin Racing's 1250 cc bolt on with Stage III heads OR
Nallin Racing's 1420 cc big bore with Stage III heads

These are basically the 1050 and the 1200 cc kits for the XB9

Has anybody gone there yet?

with the 3-9/16 bore you dont have to bore the cases, so engine doesn't have to come out. the BIG bore you have to split the cases. more money= more fun. i think you should definitely go BIG. 1420cc should be a good start, you may as well hog out the camchest area for the hi lift cams you will want to feed the beast.
