First let me say I am new to Buell so be nice. There are 2 Measurements, AT: CT:. I am assuming the AT is (Ambient Temp) and CT is (Coolant Temp)? If not please correct me. The question is this. Monday I was riding in NEPA the Temp outside was about 67F. The AT: seems to be going up and down and got up to 117F. What should I do? FYI: the CT: got up to 171F

Temp names are correct.

You don't need to do anything. the AT sensor is up front and the radiator fans blow the hot air directly onto it-hence your high and changing temp readings.

The AT will stabilize once moving at speed. Slow speed or stopped, as previously mentioned, the fans alter the indication.

here's an old post ( with pictures) about relocating the temp sensor to inside the air box...not hard to do if you can solder:

Read the whole post through before you cut any wires/move any sensors!
