Unfortunately, things like this are what has made eBay suck. In all likelihood, the winning bidder on my grips was a runner-up to your deadbeat bidder; this only hurts sellers in the long run. For what eBay charges these days, I expect a better system. In fact, I largely support eBay working out details on an escrow-like system. We don't necessarily need to use eBay as the intermediator to receive/hold money and goods, but they can take other small, but effective steps. I'd support a system that requires bidders to have funds in their paypal/eBay account prior to bidding. The winner's money is then automatically transferred to the seller.
