I have an 07 Ulysses. It had been sitting for the last 10 months. I did put stabil in the fuel. I broke it out this last weekend to get it ready as I was going to use it to commute to work this week. I tried to start it but it wouldn't go. I figured the gas had gone stale so I drained two gallons out and filled it with fresh gas. It started right up. I took it for a test ride and commuted to work on Tuesday and Wednesday no problem. Wednesday afternoon I'm in the commuter lane
cruising about 70-75 and I feel it stumble. A little bit
later the engine dies. I pulled over to the side of the road. The electrical is good per the volt meter and the engine will crank but it wouldn't start running. Finally after about 10 minutes I was able to get it running and rode about 15 miles home and filled the tank with fresh gas. Today, I rode into work with no problems but coming home same thing. First the stumble and later the engine died, I waited about 5 minutes and it started up. From there, I rode the remaining 15 miles home without any problems.

Any ideas?

Did you get the Check Engine light?

Open the gas cap when it's not behaving and see if it starts. You may have a plugged vent for the gas tank and the gas tank has become a big vacuum reservoir not allowing fuel to exit. I'm not an "Expert" on the venting on the Uly, I've had this issue with another bike.

No check engine light btw.

Maybe have the BAS checked or temp sensor.
Does it just quit, or does it seem like it is running out of gas then restarts after it cools a bit? Take it for ride a lower speeds maybe 50mph for a distance so you don't heat it up as much as you would at highway speeds and see if it still dies then.

It does the initial stumble and then a little bit later it just dies. I'll coast to a stop and let it sit for a few minutes. The longest being about 10 minutes. It will start then die a few times and then turn over and it's fine. It definitely has me scratching my head on this one.

2tracksam has a good suggestion. It sounds like your tank is not venting correctly. The vent valve is under the air cleaner. No diagnostic procedure described in the manual, but I guess you could just take it off and hit it with some compressed air. Has anyone fixed a plugged vent valve or is it a throwaway part?

I had a venting problem once too and it was hard to diagnose. I had been dorking with a specific electrical problem for weeks so when the bike started killing a little while into any ride longer than 20 minutes (just like your symptoms) I would hop off the bike and start playing with the problematic electrical circuit. 15 minutes later (about the time it was taking for the vacuum to dissipate) the bike would start and I'd chalk it up as another electrical problem. But then it would fail 20 minutes later. On one ride I got so pissed I threw my helmet into a fenced construction site! When I got back from climbing over the fence, my wife pointed out that she thought it was really acting like a tank venting issue. She was right!

I forgot to say that my venting problem was NOT on a Buell - but the symptom your describing sounds very similar.
