I have both wheels off the bike and have wiped down the bearing surface and inspected the bearings and they "look" fine. However, the front wheel bearings spin much more freely then the rears. The rears feel stiff when you spin them by hand, but they don't bind or feel gritty. Is this normal and acceptable or should I consider replacing the rears or possibly cracking the seal for further inspection? Mileage is about 5k on the wheel/bearings.

I don't think anything is wrong.

I put new bearings in, and the new bearings were very stiff.

I usually pry out the seals with a tiny screw driver and force in a little grease when I have the wheels off...with only 5k they should be ok.

Yeah, just clean the seals, pick them out, and push in a little fresh grease. If they are not showing any rust or looseness put the seal back in and run them.
